Vegan Chocolate Cookies Sandwiches w/ Mint Creme filling

Yummy recipe from my friend Krista...

Ingredients
1 1/2 cups packed brown sugar
3/4 vegan butter, cubed & softened
2 tablespoons water
In place of 2 cups chocolate chips, use cocoa mixture: 3/4 cup cocoa powder, 3/4 + 1/8 cups sugar, 1/2 cup vegetable oil
Egg Replacer Powder: To simulate two dairy eggs, mix 3 tsps egg replacer powder with four TBSP water.
3 cups all-purpose flour
1 1/4 teaspoons baking soda
1/2 tsp baking powder
1 teaspoon salt

Filling
1/3 cup vegan butter, softened
3 cups confectioners' sugar (powdered sugar)
3 tablespoons Almond Milk
1/8 teaspoon peppermint extract (more to taste)
1/4 tsp vanilla extract
Dash salt
Green food coloring

Directions
1. Combine filling ingredients. Add green food coloring until a light minty green. Cool in refrigerator.
2. In a small saucepan, combine the brown sugar, vegan butter and water. Cook and stir over medium heat until sugar is dissolved. Remove from the heat; stir in the cocoa mixture until and smooth. Transfer to a large mixing bowl; cool slightly.
3. Mix egg replacement powder and water together separately then add to mixture.
4. Combine the flour, baking soda, baking powder, and salt; gradually add to chocolate mixture.
5. Drop by rounded teaspoonfuls onto greased baking sheets. Bake at 350 degrees F for 8-10 minutes or until set. Remove to wire racks; flatten slightly. Cool completely.
6. Spread filling on the bottom of half of the cookies. Top with remaining cookies. (If filling drips/runs, add more powdered sugar to thicken it up). Store in the refrigerator.

YIELD: 4 dozen sandwiches
